This series will feature wholesome, easy-to-make recipes that are not only delicious but also perfect for fuelling active little bodies. Today’s recipe is for Feijoa and Apple Muffins – a fruity, fibre-rich treat that’s been a hit with tamariki and kaiako alike.

 

Feijoa and Apple Muffins Recipe

Ingredients
Makes around 18 muffins

  • 1½ cups feijoa flesh
  • 1½ cups apple, peeled and chopped
  • ½ cup plant-based spread, melted
  • 1 Tbsp vanilla essence
  • ½ cup brown sugar
  • 1 cup baker’s bran flakes
  • 1½ cups oats, blended
  • 2 cups self-raising flour
  • 400ml milk of choice (unsweetened soy milk is a great option)
  • 1 egg

 

Method

  1. Preheat the oven to 150°C.
  2. Line muffin trays with muffin cases or spray lightly with cooking oil.
  3. Blend the feijoa and apple together until smooth.
  4. In a large bowl, add the blended fruit, vanilla, melted spread, egg and milk. Whisk to combine.
  5. Add the brown sugar, bran flakes, blended oats, and self-raising flour. Mix until just combined – don’t overmix.
  6. Divide the mixture into muffin trays and bake for 20 minutes or until cooked through and golden.
  7. Serve warm or cool with a side of seasonal fruit for an extra boost of goodness.

 

Dairy-Free Option:
Use a plant-based milk alternative, such as unsweetened soy, which is also a great source of calcium.
